Peggy’s Cheeseburger French Fry Pie
One of my husband’s favorite meals, this is a recipe I got from my mother-in-law. It’s total Man Food! I resisted it for years, and after she passed away my husband said “Can you please make mom’s cheeseburger french fry pie for me?” So I thought, alright, I’ll try it. And it was good! I missed out on all those years I wouldn’t eat it! It’s quick to throw together, a one-pan meal that’s ready in an hour and has six generous, man-sized servings. It’s also great in smaller servings for potlucks or parties. You can add more or less beef, depending on the size of the package at the store. I’ve showed it here with slightly over 2 1/2 pounds of ground beef. I hope you love it as much as we do!
The recipe says 2 pounds ground beef and 1/2 of an onion. I used what I had. In this picture I used a whole medium Vidalia onion and slightly over 2 1/2 pounds of beef that was still partially frozen. Because of this, I increased the temperature to 375 and baked for 1 hour 10 minutes and it was perfect. Don’t be afraid to adapt what you have! I also used freshly ground salt and pepper on this layer. You could add a teaspoon or two of onion powder or garlic powder as well, if desired.
I used Clearfield white American cheese, but choose your favorite.
I use cream of celery because my husband refuses to eat mushrooms, but someday I’m going to sneak it in there. An offset Spatula makes this layer even faster and easier, but a rubber Spatula or spoon will do.
I love super crunchy fries and this dish is no exception! Use your favorite bag of frozen fries. Some day I’ll experiment with my homemade fries! I like to turn on convection mode for the last 10 – 15 minutes for extra crispy fries. Use your judgement for how crispy your fries get.
it’s not a gorgeous dish on the plate, but it sure is yummy!

The Creamiest Baked Old Fashioned Rice Pudding (Aunt Mae’s Secret Recipe)
My great-aunt ran a catering business for decades and took her recipes to the grave — almost. This old fashioned rice pudding is adapted from the one card she left behind, and according to my mom, it’s even creamier than the original. Worth every stir.

Quick and Easy Sheet Pan Cabbage and Sausage with Pierogies or Potatoes
This is one of our FAVORITE meals! We usually use kielbasa, but use your favorite sausage! The longer you leave it in, the more charred the cabbage edges become! That’s my favorite part! A few minutes of chopping is all it takes to get this into the oven before it’s even finished preheating! Dinner will…

The BEST Beef Vegetable Soup Ever
Why make THIS Beef Vegetable Soup? The very first thing I ever made from scratch, completely by myself, was a huge batch of beef vegetable soup. I received a 22-quart stockpot as a bridal shower gift from one of my aunts and decided to use it. My grandmother and I had worked at a very…

The Best Hot Spinach Artichoke Dip
I developed this recipe over 20 years ago. We used to attend a New Year’s Eve party at a friend’s house every year. After the first year, my friend told me I ALWAYS had to bring this dip because it was so popular – and that I should bring two of them! Everyone LOVED it,…

The Best Minestrone Soup
Minestrone is an Italian vegetable soup with pasta, and it’s one of my all-time faves! I’ve tried many different variations, and while they are all good, this is my absolute favorite. It doesn’t hurt that it tastes a lot like Olive Garden’s version, which was a treat when I was younger, as we didn’t eat…
